Description
Spinach ‘Matador’ is a popular and reliable open-pollinated variety of true spinach (Spinacia oleracea), distinguished from “spinach” that is actually Swiss chard, which is commonly found in South Africa. ‘Matador’ produces abundant rosettes of deep green, smooth, and thick leaves with minimal stem rib, offering a delicate, sweet flavour. It’s an excellent choice for both home gardens and commercial growers due to its vigorous growth and good resistance to bolting, making it suitable for a longer growing season, especially in cooler climates or when planted in partial shade during hotter months. The leaves can be harvested young as “baby spinach” for fresh salads, or allowed to mature into full-sized leaves perfect for cooking. It’s a versatile culinary ingredient, frequently used in stir-fries, quiches, spanakopita, pasta stuffings, risottos, frittatas, and can be simply wilted as a healthy side dish.
